Recipes

I love to try a new recipe every so often and they usually turn out well. I have a new recipe that I LOVE and shared it yesterday with some buddies at work for one of their birthday's. So, I thought I would post it as I know how the Harmons (yes, you Pops) love their peanut butter! :)

Peanut Butter Puffs

  • In a small saucepan over medium heat, combine 1/4 cup honey and 2 Tbsp firmly packed brown sugar. Heat, stirring until it begins to boil then remove it from the heat. This usually takes 2-3 minutes.
  • After removing from the heat, add 1/4 cup creamy peanut butter and stir until it's smooth.
  • Add 1 3/4 cups puffed rice cereal and stir until they are evenly coated.
  • Set the mixture aside and let it cool. Either with a spoon or your hands, round them to form a ball. It's best if you're using your hands to keep your hands damp to help with the stickness.
  • Chill in the refrigerator until they are set. I usually leave them in the frig for 1-2 hours before serving.
  • Enjoy!

7 months



Our little man is 7 months...can you believe it? Weight: 14 pounds 5 ounces = 2% for his age Height: 26" = 76% for his age

His "tricks" Say "Da Da" over and over.... Roll all over the place Circle around on his tummy Grab things, he especially likes his butterfly toy and his rings Go after his sister's toys (She's not too happy about this) Eats bananas, pears, apples, avocado, sweet potatoes and carrots (We are going to try peaches next) Eats "real food" three times a day and takes 6 bottles during the course of the day LOVES to smile and laugh Can do high-five Gets excited when he sees his sister

We are so lucky to have Cy in our lives and the relationship that he and Mollie have is awesome. We are very blessed!

To say that Cy has had a big month is an understatement. In the past month he's done the following things:
  • Took his first road trip to East Tennessee, Edisto Beach, Clemson and Columbia
  • Met many new family members
  • "Swam" in the Atlantic Ocean
  • Slept in 6 different places in 4 weeks
  • Drove through or visited 7 different states
  • Started holding his bottle
  • Started eating food. He eats cereal, applesauce, pears, sweet potatoes, avocados (I'm making his food) and carrots.
  • Started saying "Da Da" (I was in denial at first but have accepted it now)
  • Started scooting everywhere
  • Learned how to high five
  • Attended his first wedding (Uncle Nick and Aunt Lauren)
  • and the best of all....he was Baptized!!
To say that Cy is blessed is an understatement. Many friends and family came into Knoxville for his Christening. His Texas set of Godparents, Christina and Jason, flew in with their 2 girls as did my parents. His Tennessee set of Godparents (actually it's more like one Tennessee and one South Carolina) are John's brother and sister, Nick and Liz. Even though Nick and Lauren were getting married the next weekend they were able to drive into Knoxville from Columbia, South Carolina to share this special day for our little guy. We had a wonderful day and enjoyed all the time we were able to spend with everyone.

However, we are home now and John is back in football and I'm winding down our summer. Mollie did so well during her first set of swimming lessons that we're going to go through the rest of August and into mid-September just to advance her a little more. She's doing so well! She can jump in from the side of the pool and swim to whomever is in the water with her. She can dive under and get up to 3 dive sticks at one time and LOVES being thrown up in the air and coming down without someone catching her. She'll then find that person and swim to them. It's amazing! She also became real involved in the summer reading program at the city library and finished 3 reading logs which equals 60 hours of reading during the summer. Every time we go past the library she gets all excited so I'm hoping that on the weekends we can keep taking her so she doesn't lose out on that excitement.

School Luau and Road Trip

Mollie's day care had a luau the other day. Even though she doesn't go in the summer she still wanted to go to the luau. They did such a great job! The whole playground was decorated with palm trees and different Hawaiian aspects that the older kids had made. They had actual hula dancers, Hawaiian food and leis that were made by the teachers. Unfortunately, it decided to rain so we all had to go in. However, Mollie had a blast seeing her friends and her teachers.
On another note, our road trip for summer 2011 has started. We drove through the night and got to Clemson, South Carolina around 3:00 on Thursday afternoon. It's been nice having some quality time with John's grandparents and hopefully Mollie and Cy will have good memories of these times with them. We leave for the annual Harmon beach trip tomorrow to Edisto Beach and Mollie is so excited! We'll post pictures soon.

We haven't been doing much this summer. We are enjoying being home which is one thing that doesn't happen a lot when school is in session. Mollie and I have been going to the city library for storytelling time and arts and crafts. She received her library card and has already checked out, taken back and checked out more books. She's doing a reading log and is almost close to turning her first one in, that's 20 hours of reading in less than a week! She loves to be read to.
This week we start getting busy. Mollie and I are doing VBS at our neighbors church in the evenings, we're taking Mollie to see "Cars 2" on Friday, Friday is mine and John's 5 year wedding anniversary and swimming lesson. We're also starting to get things ready for our trip to South Carolina and East Tennessee. Every year we say we're going to scale down on what we take but we also have Cy this year so we'll see how that works out.

3 year old pictures









My awesome co-worker got a new camera for Mother's Day and wanted to play with it so I asked her if she would take Mollie's 3 year old pictures. I'm getting a little tired of the studio pictures and wanted to try something new. Needless to say, Amy did an awesome job! We had so much fun and she was so patient :) Thanks again Amy!!
